Its an annual thing...

For the past 3 years running, the kids and I have gone to the Rascal Flatts concert. I've seen them probably 5 or 6 times at this point. But every year we go and have a great time and sing til we're hoarse. Tiff wasn't able to come this year, so Josh came instead. There weren't a whole lot of new songs, but its always a good time so sing with the older ones. Thanks, guys! Til next March!

Just a follow up...

I'm sorry- did I say I was a little sore last week from yoga? I must have been delusional because I'm pretty sure I found muscles today in my neck and my back that haven't existed prior to this morning. Wow Lucy. But somehow I'm loving it and checked into some classes the rec center does....Tuesday nights, 8:30. Anyone in? haha

Yoga anyone?

The wife of one of our bishopric members goes to yoga each week. She has talked about her instructor, Lucy, quite frequently when she gives lessons or is just chatting with us. I'll be the first to admit that I'm skeptical about yoga being a real workout or doing much good for your body other than stretching. But Joan claims that Lucy gives her workouts to remember. So Joan has arranged for some of us to take Saturday morning classes from Lucy for the next month.
We started today.
And I'm eating my words.
My body is sore.
We didn't even do the HARD workout.
And I think I quite enjoyed it.
Thanks, Joan! You were right, as usual!

Freezer Biscuits

Several years ago, my sister and I went down to Houston to visit Aunt Martha. She's a gem. Love her dearly. She always makes the best food (which is ALWAYS healthy). One of her specialities is biscuits and gravy in the morning. Wow. Hadn't even had that until I went down there. Her biscuits were the best ever. Seriously so good with her preserves. Anyway, I asked her about them and she just giggled, as only Aunt Martha can do, and proceeded to tell me that they were Pillsbury freezer biscuits. WHAT?! I promptly became I fan of the freezer aisle at my Harmon's. I eat them pretty much every Saturday or Sunday morning with some hashbrowns.

Moving on, I recieved this recipe over my email from the FACS teachers across the state. Its for homemade freezer biscuits. Yippee!
4 cups flour
2 tbs baking powder
1 1/2 tsp salt
1 tsp sugar
1/2 tsp baking soda
1/2 cup butter
16 oz sour cream
3 tsp water

Mix dry ingredients in a bowl. Cut in butter until small well blended mixture. Add sour cream and water. Mix well. Knead and roll out into 1 inch thick. Cut with biscuit cutter or glass. Flash freeze on cookie sheet. When frozen solid, place in freezer bag to store.
When ready to use, place on ungreased cookie sheet. Bake at 425 for 15-17 minutes or until top is golden brown. Makes 12 biscuits.

I love my iPod :)

Its such a small little device, but it does sooooo many things. I love plugging it into my car and listening to any of my favorite tunes. No more visors full of cd mixes! I love being able to listen to my scriptures while I'm getting ready in the morning. So convenient! But mostly, I LOVE being able to watch The Man From Snowy River on it whenever I please! I just downloaded it last night from iTunes as my first movie purchase. Works like a charm. Now Jim Craig and I can bond any time, day or night. LOVE it!

The jeans things sidenote

Our school board decided a few years back that teachers can't wear blue jeans to school. We can wear black, pink, orange, green plaid.... just not blue. The principal can allow you to wear them once a week or so if they want, but its up to them. Shauna, good woman, seriously, won't cave on that. We are NOT allowed to wear jeans to school when there are students in the building. So- it really was a major award to be able to do that today. We tease her about it all the time and she relented. :) So I wore my best ones with a jacket haha

Its over *sigh*

As mentioned in my previous post, my school has been going through accreditation. For those of you who don't know, accreditation is where your school gets to analyze data from CRT scores, DWA scores, ACTE scores, (KFC, ATT, CBS scores...) and say- hmmm.... are we doing what we should be doing to make all these scores look good? Pretty much its a dog and pony show for the state so they can say they have Northwestern Accredited schools. (this is what we spend OUR education money on in our state)
Anyway, we have to go through it every 6 years. We did this 6 years ago and got a 6 year clear- which means that very important people read our 50+ page report that said- hey, we're cool; and agreed with us. Since then, we've been keeping up our good work and had to write another 50+ page report saying, YES, we're still as cool as we think we are. ( I take that back, the report is 130+). They, the state, has changed the requirements for a 6 year clear. BTW, a 6 year clear means they leave you alone during that time. If you don't get that, they come visit you either every 1,2,3, depending on your clear. There is no longer a 6 year clear. There is a 6 year with 3 year informal review. Because, according to the woman in charge who was at my school yesterday, "Schools want us to come back!" And she was serious! Really- what moron principal in Utah said- hey- come back in 3 years so we can do this all over again!?
Sidetracked- sorry. Here's the point. We passed with highest marks. Their biggest recommendation was- Add another DRSL (desired result for student learning- don't ask.) So now we can breathe easy and tell them again in 3 years, informally, of course, how cool we are. Yep- this is how we spend money in Utah. :) We can't pay our teachers or afford new text books but we can spend literally millions of dollars for 5 individuals to go into schools for 2 days and tell them they teach well according to data. *sigh*
I'll end with a positive note- since we passed, our principal let us wear jeans today! So here I sit at my desk, earning my hefty pay, wearing my jeans. :)
